Are you “home-alone” for the day, weekend,or an empty nester aka single? One of my biggest challenges today is cooking for one. You know all recipes are generally created for families of 4 or more. But hey, us single people love to eat delicious foods as well. And sometimes it is a pain in the tush to try to divide the recipes! This section is dedicated to the ones that find themselves in need of great choices for the home-alone.  To start you off, my sister gave me one of her favorites that she found years ago but is still a fav.



If you are not alone, don’t worry-just double this quick microwave recipe!

3 tablespoons sugar

2 tablespoons cocoa

1 tablespoon cornstarch

3/4 cup 2% low-fat milk

1/4 teaspoon vanilla extract

Combine sugar, cocoa and cornstarch in a 1-quart glass measure (my fav), and stir well.  Gradually add milk, stirring with a wire whisk.

Microwave milk mixture at HIGH for 1 1/2 minutes or until mixture is thickened.

Add the vanilla extract, and stir well with a wire whisk.

Yield: 1 serving (serving size: 3/4 cup).
